Show jROTATD WEEK TO BE IHATED TODAY Food Administrators Urge Use of Tubers to Cut the Wheat Consumption. SUGGESTIONS OFFERED United States Said to Eat Fewer Bushels Than Any Other Belligerent. This is potato week in Utah, and, by the -way, May is potato month all over the United States. Food administrators administra-tors of tho various states are urging their people to use all the potatoes possible pos-sible between now and June 1, in order that flour and like foodstuffs may be saved for American soldiers and the oyiers of tho allied nations on the 'clber side of the water. The Utah food administration, in line with tho administrations of other states, is not only urging the patriotic people of this commonwealth to use all the potatoes possible during this week and the remainder of the month, but has offered a number of helpful suggestions with respect to the care and preparation prepara-tion of potatoes for the table. Suggestions. Hore are some of the suggestions sent out from tho office of the Utah food administrator: Use potatoes to 6ave wheat. Use them in some form three times a day. Use in place of bread. Use m both yeast and quick breads. Combino with fish or meat or eggs. Make them palatable and increase food' value by using milk, cream, eggs or fat with potatoes. Season carefully. Serve attractively. attrac-tively. If potatoes are shriveled soak in cold water for several hours before paring. If badly shriveled pare and ssak in cold water for several hours. Be patriotic, and eat potatoes in, order to release more wheat for our soldiers and the allies. Potatoes at the present prices are the cheapest food on the market. mar-ket. Salad Recipe. The following recipe for making potato salad is given: Moisten three cups of boiled potatoes pota-toes with the following dressing, and garnisli with hard-boiled QgR3 or parsley: One cup of thin cream or milk. Two tablcspoonfuls of corn flour. Two eggs. One tea-snoonful tea-snoonful of mustard. One tea-spopful tea-spopful of salt. Four tablespoon-i'uls tablespoon-i'uls of sugar.' One-fourth tea-spoonful tea-spoonful of paprika, or a little cayenne. Six tablespooufuls of vinegar. Add flour made smooth in a little milk or scalded milk, and stir until smooth. Add beaten egg and cook-one cook-one minute. Then add vinegar aud seasonings. Cook until smooth, and cool. If milk is used in place of butter add one or two tablespoon-ful.s tablespoon-ful.s of butter. |
