There also are plenty of occasions when there are only one or two people home for dinner, when time is limited and so is the energy level. That doesn't mean you should settle for anything less than . a complete delicious dinner including dessert. Keep the freezer stocked with premium frozen dinners, such-j such-j ' as Armour Dinner Classics. In the few minutes it takes for . the dinners to cook in the microwave, you can put together Individual Jam-Topped Cheesecakes. The cheesecakes will cook in the microwave in the time your dinners "stand" before you serve them. They'll cool in the refrigerator while you dine. Individual Jam-Topped Cheesecakes 2 tablespoons butter or 13 cup sugar margarine, melted 1 egg 12 cup graham cracker 1 teaspoon lemon juice ' crumbs Dash nutmeg 1 package (3 oz.) cream 2 tablespoons jam or cheese, softened preserves, any flavor In small bowl, combine butter and graham cracker crumbs. Press crumb mixture into bottom and up sides of each of two 6-ounce microwave-safe custard cups. In small bowl, combine cream cheese, sugar, egg, lemon juice and nutmeg. Pour cream cheese mixture into prepared custard cups. Heat, uncovered, on HIGH 1 12 to 2 minutes or until the center of each . , cheesecake is almost set, rotating cups once. Cover loosely with plastic wrap and refrigerate 30 minutes. Top cheesecakes with 1 jam or preserves. Makes 2 servings. |
