Leona Edmonds, son Ronald and baby Heather show this interesting looking food, with colorful carrots and pineapple chunks for color - and flavor. ' - - SWEET AND SOUR PORK l'2 lbs. lean pork cut in 2 inch cubes or spareribs cut in squares or cubes of cooked roast pork 1 No. 3 can or 2!4 cups pineapple chunks Leona Edmonds gives her recipe for tasty sweet and sour pork for this week. V4 cup brown sugar 2 Tbsp. cornstarch Vi cup vinegar 1 Tbsp. Soy sauce V4 tsp. salt cup carrots, sliced in rounds yt cup chopped onion 3 cups or more cooked rice BROWN MEAT, if raw, slowly in hot fat and pour off excess grease. Add 't to y2 cup water, carrots and onion. Cover and let simmer about hour. Drain pineapple, reserving juice. Combine brown sugar and cornstarch and add pineapple juice, vinegar, Soy . sauce and salt. Cook and stir over low heat until thick. Pour over the hot cooked meat. SIMMER until ready to serve, not over 14 hours, for best flavor. You may need to add more water if necessary. Add pineapple chunks just before serving. Serve over hot cooked rice, for about 6 portions. MRS. EDMONDS serves this main dish with a tossed salad or a molded salad. Leona, husband Gary, four daughters and two sons live at 1689 North 560 West in West Bountiful. She keeps busy with the children, not in picture pic-ture are Bruce, Shauna, Jana and Kaye. Bruce raises Komoner pigeons and took first and second ribbons in the recent Davis County Fair. The children all help work in the garden. Mr. Edmonds is bishop in his ward and enjoys golfing, fishing and hunting. |
