Show foinrDClkiiinir By Angie Martin lHHf It's the time of the year to do some green stuff-for St. Patrick's Day, of course. And that surely means that spring is on the way. Let's start off with a nice gren salad. St. Patrick'! Salad "1 1 pkg. lime jello 2 cups hot water J 10 large marshmallows J 1 Lsp. mustard I 2 tbspn. mayonnaise I 1 small can crushed pineapple 1 8 oz. pkg. cream cheese j Mix jello in hot water. Add softened cream cheese and marshmallows, stir until dissolved. Add mustard and mayonnaise. When almost set, add crushed pineapple. Nuts may also be added. And here are a couple of great spinach recipes. I am very fond of spinach, but I know that not everyone shares my taste; however, maybe your "not -so-fond" of spinach family will change their minds when they taste these new concoctions. And spinach is a lovely green color. How does that song go? "It's nice to be green!" "TSdTelTTomatoBs Stuffed With Spinach Preheat oven to 350'. 1 pkg. frozen chopped spinach 2 tbsp. onion, finely chopped 2 tbsp. butter 2 tsp. bread crumbs cup milk Grated fresh nutmeg 4 large tomatoes, halved 3 strips bacon, cooked and crumbled (you can use bacon bits, but I prefer the real thing) 3 tsp. Parmesan cheese, grated Saute onion in butter and then stir in thawed and drained spinach. Add nutmeg, bread crumbs, milk. Simmer for 5 minutes. Pile the spinach mixture on top of tomato halves and cover generously with grated Parmesan cheese and bacon pieces. Bake 20 minutes. Everybody'! Favorite Spinach Preheat oven to 325 3 tbsp. butter 1 small onion, finely chopped 3 tbsp. flour '2 tsp. salt 't tsp. nutmeg 1 cup milk 1 cup heavy cream :) pkgs. frozen spinach '2 cup Sw iss Cheese, shredded 1 1 cup Parmesan cheee, grated Paprika Melt butter in skillet and saute onions. Blend in flour, salt and nutmeg Gradually add milk, then slowly stir in cream. Spread 'j of the spinach (thawed (thaw-ed and drained ) in a greased baking dish. Pour on '2of the sauce. Repeat. Top with Swiss cheese and the Parmesan plus a sprinkling of paprika. Bake 40 minutes. This serves 8. NOTE: This dish can be made ahead and refrigerated, then baked in a preheated oven for the same length of time. This isn't green, but would go nicely with one of the spinach dishes, and is one of my favorites Baked Fish with Sour Cream 2 lbs. filet of haddock, flounder or other good white fish, fresh or frozen and thawed 1 cup sour cream 1 tsp. lemon juice 1 tsp. parsley, chopped (use fresh) 1 shake garlic powder Parmesan cheese Paprika salt and pepper to taste Place fish in a greased shallow baking dish. Combine sour cream, j lemon juice, parsley and garlic powder. Spread on top of fish. Sprinkle I Parmesan and paprika on top and bake 25 minutes. j And for dessert, you could put a drop of green coloring in these, or leave I tnem as is. if you have had enough of green. ! Heavenly Angels j 1 1 2 cups flaked coconut j 'a cup sugar J 1 dash cinnamon I 1 dash mace 2 tbsp. flour j 2 egg w hites, beaten j I '2 tsp. almond extract I I Mix coconut, sugar, flour, mace, cinnamon and salt. Fold in egg whites j I and almond extract. Drop by teaspoons onto a greased cookie sheet. Bake I I 3(X) for 10-15 minutes until just brown around edges. Watch carefully!
