Hospitality. . . i&ise Cornish Hens with Pignoli Stuffing 4 tablespoons Bertolli Classico 2 bags Success Rice, cooked Olive Oil 23 cup chicken stock 1 cup chopped onion 2 tablespoons Tabasco pepper sauce 1 cup chopped celery 4 teaspoons poultry seasoning 12 cup chopped red bell pepper Salt and pepper to taste 12 cup chopped green bell pepper 12 cup pignoli (pine nuts) 1 cup chopped frozen spinach, thawed 4 Cornish game hens, thawed Preheat oven to 350 degrees F. In a large sauce pan, combine olive oil, onion, celery, red and green bell peppers and spinach. Saute" until tender or approximately 10 minutes. Add rice, chicken stock, hot pepper sauce, poultry seasoning, salt and pepper and pine nuts. Lightly sprinkle body cavity of hens with salt. Stuff lightly with rice mixture. Tvist wing tip under back; tie legs together. Place breast side up on rack in roasting pan. Brush hens lightly with olive oil for a golden brown baked hen. Roast hens 350 degrees for 1 hour. Remove hens carefully from roasting pan. On a bed of lettuce or garnish, arrange hens on a platter. Makes four servings. Kedgeree 1 bag Success Rice, cooked 2 teaspoons curry powder 3 hard cooked eggs (whites only), shelled 1 teaspoon Tabasco pepper sauce Salt and pepper to taste 14 cup sliced onions 1 cup smoked haddock or white fish 23 cup low-fat milk Garnish: 1 bay leaf chopped parsley, paprika, sliced lemon Combine rice and chopped egg whites. Add salt and pepper to taste. Place smoked fish in a saucepan with milk, bay leaf, curry powder, hot pepper sauce and onion. Heat for 5 to 10 minutes. Remove from heat and allow to cool slightly. Remove and flake the fish from the skin. Add to rice. Remove the bay leaf and heat all ingredients together. Serve on heated planer, using the garnish of parsley, paprika and lemon slices to provide color and zest. L- Serves four. Country-Style Stuffed Acorn Squash i 4 medium acorn squash 2 tablespoons chopped Italian parsley Bertolli Extra Light Olive Oil 2 tablespoons chopped fresh basil or for baking 12 teaspoon dried basil Salt and pepper to taste 1 teaspoon Tabasco pepper sauce 2 tablespoons Bertolli Classico Olive Oil Salt and pepper to taste 1 cup chopped onion 12 cup Parmesan cheese 3 cloves garlic 12 cup roasted sweet red peppers, 1 cup chopped, seeded tomatoes thinly sliced 1 bag Success Brown Rice, cooked Preheat oven to 400 degrees F. Cut off top quarter of squash. Scoop out and discard seeds. Place squash, cut side up, in baking dish; add water to come 12 inch up sides. Brush flesh with extra light olive oil; sprinkle with salt and pepper. Cover dish with foil. Bake 30 minutes. Microwave Directions: Prepare squash in the same manner described above (with the exception of adding water to the dish). Place in dish just large enough to hold the squash and cover tightly with plastic wrap. Microwave on HIGH 7 to 10 minutes. In a large skillet, heat 2 tablespoons olive oil and saute" onion and garlic for 10 minutes or until tender. Add remaining ingredients, except Parmesan cheese and the red peppers. Mold mixture in squash shells. Garnish tops with red pepper slivers, and sprinkle with Parmesan cheese. Bake 15 minutes. Serves four. Each serving provides 282 Calories, 8.61 g protein, 10.8 g total fat, 39.8 g carbohydrate, 198 mg sodium, 4.93 g dietary fiber and 7.86 mg cholesterol.
