SUMMER SALAD , 1 qt. fruit cocktail, un-,' un-,' drained 1 can mandarin oranges, drained 1 20-oz. can chunk pineapple, pineap-ple, drained 2 bananas, sliced 1 6-oz. pkg. instant lemon pudding MIX ALL fruits together, drained or undrained and stir t in the instant lemon pudding. Mix well and refrigerate all day if serving the salad in the evening. , BIG BOY PIZZA SANDWICH 1 loaf French bread 1 4-oz. can mushrooms, drained 13 cup olives, ripe, chopped 1 Tbsp. onion, minced 1 tsp. oregano Vi tsp. garlic salt Dash of pepper 1 8-oz. can tomato sauce 1 cup mozzarella cheese, shredded Vi cup parmesan cheese BROWN THE ground beef in frying pan, pour off excess fat and add mushrooms, olives, onion, oregano, garlic salt and pepper, mix well and stir in the tomato sauce. Cut the bread in half, lengthwise, leng-thwise, spoon the meat mixture mix-ture on the two halves of bread and sprinkle with the mozzarella moz-zarella and parmesan cheeses. Place bread halves on a cookie sheet and bake at 400 degrees for 15 to 20 minutes until cheese is melted and hot all the way through. POTATO CASSEROLE 12 medium potatoes 1 10-oz. can cream of chicken chick-en soup 1 pint sour cream 13 cup onion, chopped IVi cups cheese, grated Vi cup butter, melted cornflake crumbs 2 Tbsp. butter, melted COOK THE potatoes in salted water until tender, cool and peel, grate potatoes on a I fib i y Xj ) r s . Place potatoes in a 9x13 inch baking pan. Mix the cream of chicken soup, sour cream, onion, cheese and 'A cup butter and pour over grated potatoes in pan. Mix the cornflakes with the 2 Tbsp. melted butter and sprinkle over the potatoes and sauce. Bake at 350 degrees for 30 minutes and serve. SHAUNA M.
