Show Vegetables Should Provide Maximum Food Value Summer vegetables are now appearing ap-pearing in many victory gardens around Cedar City, and if they are to be true victory gardens we must get from them all the food essentials essen-tials possible. It is a temptation to many home makers to pick and prepare vegetables vege-tables In the cool hours of early morning, store them in the refrigerator, refriger-ator, and then serve them in the evening. If the food values are to be kept at a maximum it isn't such a wise practice, for the lass of vitamin vit-amin C is one of our chief concerns when preparing vegetables. Vitamin Vita-min c is rapidly lost through wilting wilt-ing and evaporation; therefore, it is a good practice to gather the vegetables just before they are to be prepared and then servie as soon after cooking as possible. If it Is found that it is necessary to ttore vegetables in the refrigerator, refrigera-tor, a few common rules can be observed, ob-served, such as; peas and lima beans should be left in their pods until just before cooking; the tops should be cut off from vegetables before storing; the outer leaves of cabbage, lettuce, etc., should be left on Uie vegetables, and laltr shredded for salads or soups, as they contain much mow nutriment than the blanched inner laves If vegetables are purchased from the markets instead of gathered from the garden it is really poor economy to purchase several days' supplies of peus, corn, string beans, spinach, etc., for vitamin C is lost in storage, but such vegetables as tomatoes, potatoes, cabbage, pep-pers, pep-pers, can be purchased in large quantities as evaporation and wining win-ing of such vegetables is prolonged. To have a fresh supply of vegetables vegeta-bles at all times, dally purchases are wise. |
