Marinating chicken adds a whole new dimension to its flavor. However, the National Broiler Council notes that chicken absorbs flavors readily and marinating time should be kept at a minimum. Unlike red meats which are marinated to tenderize, broiler-fryer chicken has delicate tissues which are already tender and marinade, used primarily for seasoning, is readily absorbed. |
