A. under the direction of Miss Hallie F. .Scruggs, expert in dietetics and domestic do-mestic science, is proving helpful to Salt Lake housewives in meeting the . requirements of the government food ', administration. i A demonstration on some important ; points in conservation and substitution of foods less in demand for those needed need-ed in supplying the army, is given in the ; Continental Bank building once a week 'on Monday afternoon lit 3:30 o'clock, i For the payment of a nominal sum lor each lecture or for the entire course, Salt Lake housekeepers can get many valuable suggestions. . The demonstration last Monday was I on the making of hot bread from corn I meal, rice and other cereals besides I wheat. Tomorrow afternoon directions will be given for making custards .and other light desserts as substitutes for expensive pastries, thus saving flour, sugar and fats. The first demonstration demonstra-tion two weeks ago was on meat substitutes. sub-stitutes. The attendance in the class grows each week. The number attending last Monday was twenty. MtSS M. LOIS COVINGTON, efficient effi-cient along physical culture lines, has accepted the position of physical director of the Y. W. C. A. A now term in the physical department will open this week. Matrons' classes will meet Monday evening from S until !) o'clock ill the Y. M. C. A. gymnasium on East Broadway. Broad-way. A business girls' class will meet Monday evening from 7 until 8 o'clock. Juvenile classes meet Tuesday and Friday Fri-day afternoons from 4 until 5 o'clock. Classes aro conducted at the Edison school Monday and Thursday afternoons. after-noons. The Young Women 's Christian association asso-ciation will hold the regular vesper service this afternoon at 5 'o'eloVk, sixth floor Continental Bank building. Mrs. H. V. Reherd will give a reading, "The Three Things," by Mary Shipler Andrews. Special music, will bo furnished. fur-nished. All women, and girls are in-viled.
