Show Yogurt 'Picnic' Cake YOGURT SPICE CAKE 12 cup butter or margarine, softened 1-12 cups sugar 3 eggs 2 cups unsifted all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 12 teaspoon ground nutmeg 14 teaspoon salt 1 cup plain yogurt Spiced Coconut Topping Preheat oven to 350 F. Grease and lightly flour bottom and sides of 13 x 9 x 2-inch baking pan. Cream butter with sugar until smooth. Add eggs; beat until blended. Combine flour, baking powder and soda, cinnamon, nutmeg and salt. Stir alternately with yogurt into egg mixture. Pour into prepared pan. Bake for 35 to 40 minutes. Remove from oven. Let stand for 5 minutes. Spread Coconut Topping over cake. Place under hot broiler until golden. SPICED COCONUT TOPPING 12 cup firmly-packed light brown sugar . 1 tablespoon butter, melted 34 cup shredded coconut 12 cup finely chopped walnuts 18 teaspoon ground nutmeg 14 cup milk In a small bowl cream brown sugar with butter. Stir in remaining ingredients; mix well. Yield: 15 portions. |
