Show Happy Home-making Hints By Janet Weaver Summer is almost upon us and those old casseroles just don't taste that good, and the gardens aren't producing fresh vegetables yet; so what are we going to eat? Wanted! Recipes to whet those summer appetites! Please send recipes and requests to me at 116 N. 200 E. or call 586-6759. For a tasty dessert try this all time favorite. PINEAPPLE UPSIDE DOWN CAKE In a heavy frying pan slowly melt a piece of butter the size of an egg. Stir into this 1 cup brown sugar and pat well to cover the bottom of the pan. Cut 4 slices of pineapple into small pieces and arrange over sugar. Sprinkle a few nuts over this and set aside and mix the following : 3 eggs 1 cup sugar 1 cup pastry flour 6 Tbsp. pineapple juice Beat the eggs separately (yolks in one bowl-whites in another). To the whites add M cup sugar and beat again. To the yolks add the other half of the sugar and beat vigorously; then add the pineapple juice and beat again. Combine the two mixtures and fold in the flour. Pour this batter over the mixture in the pan and bake in a slow oven 325 - 350 deg. from 45 minutes to one hour, (if baked too fast the brown sugar gets hard.) When done turn the cake over onto a plate, slice and serve with whipped cream. |
