Show Janet says Chinese meal special (chopped) l'z cup grated cheese (mild cheddar) Vi chopped onion 1 can heated cream of chicken soup (mixed with water as directed) 1 can crushed pineapple (drained) Vi pkg. flaked coconut 1 cup chopped roasted almonds Helpful hints: If you don't use minute rice, make sure you start your rice in cold water, start timing from the time it starts to boil; and leave the lid on the entire time. ORANGE SAUCE (good over ice cream or mince pie) 1 cup brown sugar 1 egg (beaten) l4 cup orange juice and grated rind 4 cup butter Mix well, and place over medium heat and bring to a boil while stirring constantly. Boil 2 minutes (still stirring continuously) and serve hot. Remainder can be refrigerated. FORTUNE COOKIES Mix: 1 egg '2 cup sugar 2 Tbsp. oil Mix in another bowl: lk cup cornstarch 2 Tbsp. water Mix a bit of the egg mixture into the corn starch mixture at a time until it's all mixed together. Drop by tablespoonfuls into a frying pan (350 degrees) with grease in it. Use your tablespoon to keep it in a round shape. Fry until light brown and then turn over and fry on the other side. Take it out of the pan and insert a fortune typed on a thin piece of paper. Fold in half and pinch corners. Then take back of it and bend it over, pulling corners together. Why not try serving Chinese sundaes with a hot roll and then finish it off with a dessert of ice cream, topped with orange sauce, and homemade fortune cookies. Thanks go to Maureen McKibben for the Chinese sundae and orange sauce recipes and to Sybil Corry for the fortune cookie recipe. CHINESE SUNDAES (serves 8-10 could be enlarged according to need) Prepare everything ahead of time, and then put ingredients in individual in-dividual dishes in the following order. Each individual takes his plate and puts one thing on top of another. Rice (2 cups cooked) Chow mein noodles (1 sm. can) 1 chicken (boiled, boned and diced) 2 cut tomatoes 3 stalks celery |
