Tasty home-baked cookies are an especially welcome- treat for the snack hour at the end of the day. Here are two delicious cookies Just right for snacking Coconut Cream Wafers and Macaroon Crispies. Both these cookies make a nutritious snack for any time of the day. Because they are prepared with enriched flour, they offer generous amounts of three essential B-vitamins niacin, thiamine and riboflavin and the mineral, iron. Coconut Cream Wafers are rich, lightly crisp, cookies with the flavoring of orange, brown sugar and sour cream. Sweet coconut flakes are sprinkled through the dough for more flavor and texture. Nut-filled Macaroon Crispies are moist, chewy little rounds, delightfully easy to prepare. COCONUT CREAM WAFERS 3 '.j cups sifted enriched flour 2 eggs, beaten 'j teaspoon baking powder lj teaspoons vanilla extract 'i teaspoon salt K teaHponn orange extract teaspoon soda j'j cup dairy sour cream ?4 cup butter or margarine 1 cup flaked coconut 1 cup brown sugar (SJi-ounce can) Sift together flour, baking powder, salt and soda. Cream together butter or margarine and brown sugar until light and fluffy. Add eggs and flavoring extracts. Beat well. Blend in about half the flour mixture. Add sour . cream and mix thoroughly. Then blend In remaining flour mixture. Add coconut and mix well. Shape dough Into rolls and wrap In waxed paper. Chill overnight in refrigerator. Slice i or i inch thick. Bake on lightly greased baking sheets in moderately hot oven (400T.) about 30 minutes. Makes about 8 dozen cookies, MACAROOX CRISPIES 1 cup fine dry bread crumbs 1 cup chopped nuts 1 cup sugar i t-aipon vanilla extract 4 teaspoon salt 2 eggs, beaten Combine crumbs, sugar, salt and nuts. J.dd vanilla extract to beaten eggs. Add to crumb mixture and mix well. Drop by teaspoonsful on a well-greased baking sheet. Bake in moderate oven (350T.) 15 minutes, or until lightly browned. Remove from baking sheet to cooling rack at once. Makes about 40 2-inch cookies. |
