STARTING WITH a good sized beef soup bone and cooked until the meat i. under, then cut into hue sii chunks with vegetables sim-i sim-i ere-) together, makes a nutritious nu-tritious heart warming meal which the children love. Mrs. Allen calls this original recipe a budget stretcher which she serves often to husband Buz and the children. FOR A favorite dessert Jan makes a luscious Ice Box cake, also a treat for the family. This dessert is a delicate pink, made bv adding a little Maraschino cherry juice and the cherries are added, ad-ded, cut into small pieces. This dessert with vanilla wafer crumbs is made ahead of serving time and put into the freezer for several hours. BUDGFT STRETCHFR VEGETABLE SOUP I good sized soup bone 1 -24 oz. can V-8 juice 6 diced carrots 1 No. 2 can tomatoes 3 diced potatoes 1 j cup chopped celery' 1 small zucchini squash, sliced salt, pepper onion salt to taste COOK SOL'P bone until meat is tender, covered with water. Cut meat into small chunks and put into the beef stock. Add the remaining ingredients and simmer until vegetables are lender. ICE BOX CAKE 2 dozen vanilla wafers 2 eggs, well beaten l'-2 cups powdered sugar 1 3 square butler 1 pint whipping cream t-8 oz. bottle Marachino cherries I cup nuts, chopped CRUSH VANILLA wafers fine and spread on bottom of 9xt pan. reserving enough for sprinkling over top of dessert. Melt the butter and add 1' 3 cups powdered sugar, blend tn the well beaten eggs, beating beat-ing until smooth. Pour over he crumbs and refrigerate, while preparing next step. WHIP THE cream, sweeten to taste and add 1 tsp. vanilla and enough of the cherry juice to make it light pink Fold in the cherries which have been cut into small pieces and the nuts. Spoon over the top of mixture in pan. smooth carefully and sprinkle with remaining crumbs. Place in freezer for 4 to 6 hours. Serves about 12 portions. por-tions.
