Show This Week's RECIPE ... Several requests have been made to reprint the following date-filled date-filled cookie receipe, which was submitted by Mrs Ralph Shields. . These make a delicious holiday snack and keep fresh for several weeks in a tight container. DATE-FILLED COOKIES 1 lb. dates, pitted and cut up 1 cup sugar 1 cup water 1 tsp. vanilla 2 tsp. lemon juice Cook together and cool. Mix the following in large bowl: 1 cup shortening (half butter and half Spry) 1 pinch salt 1 cup fine oatmeal 2 cups flour 1 cup brown sugar Mix well together with hands as for pie crust until very fine. Put half of mixture on bottom of cookie' sheet (size 10" x 15" x 1" deep) and pat down firmly. Spread date mixture on top. Then put remainder re-mainder of pie crust mixture on top and pat down well. Bake 2 v hour in moderate oven. When done cut into small squares of 1 x 2 inch strips. |
