X '-a FAVORITE RECIPE By KATHRYN JENNINGS : Violet Lake, an energetic and ambitious senior citizen is always busy at some activity. She is preparing pre-paring a tator tot casserole for the family lunch. She has a very easy but tasty homemade mayonnaise, ready in the refrigerator, for any type of salad. V OFTEN USED in the home is a hobo casserole with meat and vegetables, put together in a short time. A Swedish meatball recipe is easy and a favorite of the family, served with rice. She also shares a snowball dessert, nice for serving at parties, and a health type candy, in which you could add a variety of ingredients. TATOR TOT CASSEROLE 13 cup onion, chopped 1 or 2 stalks celery, chopped 1 cup mushrooms, sliced 1 lb. ground beef ': cup milk 1 10-oz. can cream of mushroom soup 1 lb. pak. tator tots BROWN ONION lightly and add ground beef, brown all well and pour off excess grease. Add the mushroom soup mixed with milk and combine all ingredients. Pour into casserole and bake at 350 degrees de-grees for xh hour. Serves 6. HOMEMADE MAYONNAISE 1 egg 1 tsp. dry mustard 2 or 3 Tbsp. apple cider vinegar or lemon juice I cup salad oil PLACE EGG, mustard, vinegar or lemon juice in blender and very slowly, pour the oil in a steady ', stream, while whirling the blender. It may be necessary to stop blender as it thickens. Stir, if necessary, stopping blender and continue to add oil. Store in refrigerator. Other seasonings might be added as to the family's taste, or thin with more vinegar or lemon juice if necessary. HOBO CASSEROLE Spread over the bottom of casserole, cas-serole, cooked and seasoned ground beef, as much as desired. Cover with sliced onions, sliced potatoes and last, a layer of sliced raw carrots. Now pour over all a . can of cream of mushroom soup, the 10 oz. size and dilute soup with half a can of milk. Cover and sprinkle buttered bread crumbs or croutons over the top. Bake for 1 Vz hours at 350 degrees. Serves about 6. SWEDISH MEATBALLS OR SAUCE 3 lb. ground beef or amount de- Violet Lake likes making a tator tot casserole for her hungry family. Other favorite recipes include a hobo casserole, Swedish meatballs, snowball dessert and health candy. sired 3 large shredded wheat biscuits, crumbled Vi cup canned milk, mixed with 2 eggs, beaten 1 tsp. each, mustard and pepper 2 tsp. salt Vi tsp. cloves Vt tps. nutmeg 2 tsp. garlic powder 2 10-oz. can mushroom soup Rice MIX BEEF, shredded wheat, crumbled, canned milk and eggs, blending well. Now mix seasonings into the meat mixture, blending well. If you prefer meatballs, make the small balls at this time. Or if you prefer just the meat sauce, put either meatballs or the meat mixture mix-ture into a large frying pan and cook until done, turning during the cooking. After meat is well cooked, add the mushroom soup and continue cooking until all is smooth and hot. Serve over cooked white or brown rice. Serves about 15. SNOWBALL DESSERT Vt lb. butter, softened 1 cup sugar 2 eggs, separated 1 cup crushed pineapple, well drained 1 cup nuts, crushed - 1 tsp. vanilla Vanilla wafers Whipping cream Shredded coconut CREAM BUTTER with sugar, add egg yolks, beating well. Fold in pineapple, nuts, vanilla. Place a spoonful of'the mixture on 3 vanilla wafers and stack the 3, continue until all mixture is used. Place the stacked cookies in a container, con-tainer, covering well and regriger-ate regriger-ate for about 24 hours. The egg whites may be used for another recipe re-cipe or as desired. WHIP THE cream, using amount desired, and cover each stack of three cookies with the whipped cream, sprinkle with coconut over all, and refrigerate another half hour. To serve, place a stack of the dessert on each plate and top with a red or green candied cherry and serve. FOR THE health candy, Mrs. Lake suggests trying about 2 cups of either whole wheat flour or powdered pow-dered milk, add honey to make a heavy paste. Then add a little peanut butter, carob powder, crushed nuts, ground dried fruits and flavorings as almond, coconut, banana, or desired flavor. Make small balls and roll in crushed nuts or shredded coconut and they are ready to eat. Refrigerate in a covered co-vered container. You might like to try just a small amount to see if the family would enjoy these. VIOLET Lake is an energetic healthy person, believes in nutritious nutri-tious health foods and various vegetables and fresh fruits. She also believes that we do not exer-, cise enough, especially when- we become senior citizens.. . ... . , She advocates moving every.'; muscle of the body every day, even crawling about the house for this gives about 200 various moye-', ments to body muscles for good tone. WALKING OR any other exercise exer-cise helps to maintain a healthy condition for- the body but do keep up some type of exercise, for a good body tone. She recently filled a mission for her church in Mesa, Ariz. MRS. LAKE has numerous natural natu-ral springs in her back yard in Farmington and the water tests pure. Many friends come to fill their containers from this spring water which is so good for drinking. Mrs. Lake has five children, daughter Holly and three children make their home with her. Son Darrell lives in Farmington and daughters, Leanna Rose, Iris Daton and Lucille Saez are all residents resi-dents of California, kj |
