Do any of you fine homemakers out there know how to get grape koolade out of carpet? At least one reader would be forever grateful if you do. Why not try this salad with a "south of the border" flavor. Thanks goes to Margo Stratton for this one. TACO GRANDE SALAD V2 lb ground beef 1 cup kidney beans, drained Vi cup water 2 Tb. finely chopped onion 1 Tb. chili power V2 tsp. salt V2 tsp. garlic powder 2 cups bite-size pieces of lettuce 1 cup bite-size pieces of spinach 2 tomatoes, cut into thin wedges 1 small slice avacodo V2 cup shredded cheese V4 cup sliced olives 2 Tb. chopped onion V cup mayonnaise 2 Tb. chili sauce V2 tsp. red pepper sauce 1 pkg. tortilla chips Cook and stir ground beef in 10" skillet until brown; drain. Stir in beans, water, chopped onion, chili powder, salt and garlic powder. Heat to boiling; reduce heat. Simmer uncovered, un-covered, stirring occasionally, oc-casionally, 10 minutes. Cool 5 minutes. Mix greens, tomatoes, avacado, cheese, olives, and 2 Tb. chopped onion in salad bowl. Mix mayonnaise, chili sauce and pepper sauce; toss gently with salad mixture. Pour ground beef mixture over salad mixture, toss gently. Add tortilla chips. Serve immediately. |
