Show H MACAROON CREAM JELLY. Soak one-fourth of a box of gelatin In one-fourth of a cupful of cold water. Beat the yolks of three egg3 and, after adding three teaspoon-fuls teaspoon-fuls of sugar, pour over half a cupful of scalding milk. Put two more cupfuls of milk In a double boiler with tho scalded milk and eggs. Add a pinch of salt and stir until creamy. Then add the soaked gelatin and half a cupful of pounded macaroons- flavored with a teaspoonful of vanilla extract. Stir these until well mixed, then add tho whites of the eggs beaten stiff. Turn Into a mold and stand In a cool place. Servo-surrounded with whipped cream. Raspberry Shortcake. Cream half a cupful of butter and beat into it a cup-ful cup-ful of sugar. Beat two eggs until stiff IH and add to them half a cupful of milk. Put halt of this to the butter and sue-ar, sue-ar, with one cupful of sifted flour. Boat well and add the remainder of the milk and eggs together, with another cupful of flour Into which has been put a level teaspoonful of baking powder. Turn this mixture Into four Jelly cake pans and bako for ten minutes ln a quick oven. Beat the whites of the eggs with two tablespoanfuls of pow-dercd pow-dercd sugar. Crush one cupful of rasp-berries, rasp-berries, add them to the whites of tho eggs and spread evenly on the short-cake short-cake layers, reserving some of the jM mixture for the top, which should bo dotted with whole "berries. When the cake layers aro held togother with whipped cream the filling ls richer. Strawberries With Junket. Take a tablespoonful of liquid rennet, two ta-blespoonfuls ta-blespoonfuls of powdered sugar and a teaspoonful of strawberry julco and stir them into a quart of fresh milk. Place In a warm room. When the mix-ture mix-ture Is set like a custard, then put im-mediately im-mediately on Ice until ready to serve. Berry Sauce. Beat one-half cupful of double cream until light. Add one tablespoonful of powdered sugar, one tablespoonful of crushed and sweeten-ed sweeten-ed berries and one and a half tabic-spoonfuls tabic-spoonfuls of powdered macaroons. |
