Rolled oats is used in the crumb crust, a bit different differ-ent but easy to make and popular at any time of the day or evening. By KATHRYN JENNINGS 451-2027 Mable DeVore has just baked a pan of yummy raisin bars. This recipe is a bit unusual un-usual as the filling is cooked and then poured over a crumb crust. Then part of the crumb mixture is sprinkled over the raisin filling and baked to a gol den brown. There are no eggs in the recipe so anyone who cannot eat eggs might enjoy this moist fruity bar. YUMMY RAISIN BAR 2'A cups raisins V cup water Vi cup sugar 3 Tbs. lemon juice 2 Tbs. cornstarch cup soft butter I cup brown sugar, packed -Vt cups flour I (sp. salt 'A tsp. baking soda 1': cups rolled oats. IN A saucepan, combine raisins, water, the cup white sugar, lemon juice and cornstarch. corn-starch. Cook over low heat, stirring constantly until thick. cool. In a mixing bowl, combine com-bine butter and brown sugar and cream until fluffy. Stir in the flour, soda, salt and oats. This dry mixture will be the crust and topping. In a 9x13 inch greased pan, press firmly, half of the dry mixture. Spread the cooled raisin filling over the crumb crust and top with the remaining remain-ing crumb mixture. Bake at 375 degrees at 25-30 minutes until lightly browned. LET COOL and cut into bars or squares and serve. This bar may be served as a cookie or a square of it may be topped with a dollop of whipped cream for a delicious dessert, moist and chewy with raisins.
