Js m4ffls CARROT CAKE Coy Lofgreen serves Lee Olscn, a Farmington Lion, some of the popular carrot cake baked by Melba Johnson. With three cups of grated carrots in the batter, it is moist with a luscious flavor, with cinnamon and nuts. A frosting of cream cheese tops this cake for a creamy contrast to the dark cake. By KATHRYN JENNINGS Lee Olsen is being served a piece of carrot cake by Coy Lofgreen. Lee is a Farmington Lion Club member who happened hap-pened to be present for the picture-taking session. THIS MOIST and spicy carrot car-rot cake was made by Melba Johnson, member of the Farmington Farm-ington Literary Guild, but unable un-able to be on hand for the picture. pic-ture. Lee was pleased to be in on the tasting party. Coy hosted the Literary Guild one evening recently when each member brought a favorite dish to be served for the annual buffet, so there was a great tasting party of such a variety of foods, from entrees I to desserts, and all were really delicious. THE CARROT cake is prob-( prob-( ably a favorite of almost every- one who enjoy s a dark moist cake and may be served at any time of year. With a cream cheese frosting, so smooth and mild, it is a contrast to the spi-cy spi-cy cake and helps to keep it l moist for several days. CARROT CAKE 3 eggs, beaten ': cup oil or margarine mar-garine 2 cups sugar or Vi cup honey 3 cups flour 2 tsp. baking powder pow-der 2 tsp. soda 1 tsp. salt 2 tsp. cinnamon chopped nuts if de sired 3 cups grated carrots car-rots BEAT THE eggs well. Cream oil or margarine in a large mixing bowl and add the beaten eggs, stir in all the dry ingredients, mixing until smooth. Fold in the grated carrots car-rots and chopped nuts, mixing well. For additional flavor, use 1 cup crushed pineapple drained for one cup of the carrots. car-rots. Spoon into a 9 x 13 floured and greased baking pan and bake at 350 degrees for 35 minutes mi-nutes or until done when tested. ( REAM CHEESE ICING I 3 or 4 o. pkg. of cream cheese, softened I lb. powdered sugar '? slick butter or margarine, softened tsp. vanilla MIX ALL together until smooth and a suitable consistency consis-tency for spreading, add a little milk if too stiff and spread over the cake. Coy loves to do needle work of all kinds, makes many interesting in-teresting wall hangings and pictures, that is one of her chief hobbies. In fact, she likes all kinds of crafts. THE FAMILY has lived in Farmington for seven years and really love this area. Coy's husband Lowell is employed with Mountain Fuel, the children chil-dren are Tarn. 13; Alex. 10; and Jeffrey. 3. Mr. lofgreen loves tobuild and built muchof their present home on the east bench with a lot of help from Coy. 1 he family enjoys camping camp-ing and hack packing in the summer. Melba Johnson is also a long-time resident of I arming-ton arming-ton and enjoys many activities. Melba and husband Jay Johnson John-son have a son Gary who attends Kaysville Junior High School, (iary isactive in sports and is an accordian player, entertaining en-tertaining in many plates. THE FAMILY enjoys travel, having been to Europe and Hawaii and often go to Flaming Gorge for a weekend, or to their canyon home in I mmigration Canyon. I his is an excellent cake to take on summer picnics or for a patio party, nice and moist and a good dessert alter any meal.
