Even the crust is not rolled in the usual fashion, but is just mixed and patted into the pie pan. The dried soup mix is also great to prepare and then in a short time it can be cooked and ready for serving and nothing is better than hot soup after a day out in the cold. DUTCH APPLE PIE For the crust: iy2 cups flour l'2 tsp. sugar 1 tsp. salt l2 cup salad oil 2Tbsp. cold milk For the filling: 4 cups sliced cooking apples cup sugar 2 Tbsp. flour V2 tsp. each nutmeg and cinnamon For the Topping: 1 -." cup'flour- " ' ..' 4i cup butter "'' , 'j cup sugar ' " ",: ' ,: MIX THE crust ingredients until crumbly and well blended. Then pat into the bottom and up the sides of a 9 inch pie plate. For the filling, slice the apples ap-ples after peeling. Combine sugar, flour, seasonings and toss lightly with the apples. Place in the unbaked pie shell and sprinkle with the juice of l2 a lemon or 4 to 5 Tbsp., over the mixture. NOW COMBINE the flour, butter and sugar for topping and mix until crumbly. Sprinkle this mixture over the apples in crust. Place the pie in a brown paper bag, large enough to tum under the top so it is well sealed shut. Bake at 350 degrees for one hour and 45 minutes, do not peek during cooking. Remove from oven, cool slightly and serve with a slice of cheese, a scoop of ice cream or just plain. DRIED SOUP MIX 1 20 oz. box Chris Mooney, daughter Michelle and son Brett, are going to enjoy a Dutch apple pie. It has been baked in a brown paper bag. The tall bottles are filled with a dry soup mix, convenient and easy to make into a bowl of steaming good soup. brown rice 1 16 oz. pkg. pearl barley 1 12 oz. pkg. dry ' green split peas 1 luoz. pkg. alphabet macaroni 4 cups dry minced onion MIX ALL these ingredients together and store in airtight containers. Store in a cool, dry ptace. Use within 6 to 8 months. Chris also suggests using any dehydrated vegetables, vegeta-bles, such as 2-3 cups sliced dried carrots, or home dried peas in place of the split peas, even about 2 cups or more of dried, sliced zucchini may be used, especially if you dry vegetables at home. When ready to make soup, just add i'2 CUPS of the dry soup mix to 6 cups water and salt to iaste, about one Tbsp. or more. Bring this to a boil and simmer about one hour, : fresh vegetables may be added . as it cooks, tomato sauce or , left over meat or poultry is also good to use. This amount serves 6-8 large bowls of soup. CHRIS AND Jack Mooney have three children, Michelle, Brett and Gregory living in Farmington. She is especially interested in cooking, a talent which she credits to her mother, Joyce Weese, also a great cook. Chris is a talented seamstress, an expert in crewel embroidery and crocheting and loves to make gifts for her friends and relatives. rela-tives. She is also involved in a new business, "Home Bazaar" which sells homemade items, a very interesting hobby for her. She enjoys entertaining friends and family and with the assistance of Ruth Brinkerhoff of Farmington, has put together a ward recipe book which will contain con-tain many excellent recipes. CHRIS SENT the unusual pie recipe to a local radio station and said, "The com-municaster com-municaster simply went bananas over the pie and gave the recipe to hundreds of listeners' lis-teners' Her mother, Joyce Weese, was the one having the original recipe. Of the dried soup mix; she suggests making it up and . storing in fancy or decorative containers, attach the recipe and tie with seasonal ribbon and give to friends or relatives rela-tives for a useful gift, also quite inexpensive and would be appreciated by any family. Any of the fall vegetables would be good to dry and use for the soup mix. |
