Show Home makers Hints By Janet H. Weaver --- 4 Ever been rushing off to a meeting and planning to have a big meal immediately im-mediately afterwards? The roast is in the oven, the rolls are rolled out and in the refrigerator ready to take out and pop into the the oven, the salad is made, the punch is made, and the table is set; but what about the potatoes? Baked potatoes just won't do. You want good old mashed potatoes and gravy ; so what's the answer? After some experimentation ex-perimentation I've come up with an idea which works for me and might for you. Just before leaving for that meeting, peel and slice your potatoes; drop the potatoes in a pan of salted hot water; and guickly bring to a boil. The minute the water comes to a full boil, turn off the heat (leaving the pan on the burner to utilize every bit of heat) and go off to your meeting or whatever. Within an hour your potatoes will be cooked and ready to mash. I have left them in the water as much as 2 hours but wouldn't recommend any longer. This not only gives you the convenience of having the potatoes ready to eat upon your return; it also saves heat or energy; and it seems to me that less of the potato cooks away and is lost in the water which is often thrown away.
