She tops it with a dollop of whipped cream or topping. WITH FRESH peaches in the local orchards, you might like to bake this easy delicious pie which will be a good change from the two crust pie. This pie ie equally good using us-ing fresh sliced rhubarb or tart apple slices, the early tart Suzette Spencer serves daughter Annette, a wedge of an unusual peach pie. This is a crustless pie, but delicious for dessert and especially at this season with fresh peaches available. Other fresh fruits are equally good. varieties are excellent. This is such an easy dessert, that the variet of fruits which may be used will give a nice change for any meal. CRUSTLESS PEACH PIE 3 cups fresh peaches, sliced thin 2 eggs 1 cup sugar 2 Tbs. flour Vi tsp. nutmeg Vi tsp. cinnamon 'A cup butter or margarine Vi cup brown sugar Two-thirds cup flour BEAT TOGETHER, the eggs, sugar, 2 Tbs. flour, cinnamon cin-namon and nutmeg and mix with the peaches. Spoon into a 9 inch pie plate. Crumble together the butter, but-ter, brown sugar and two-third cup flour and spread over the top of the fruit mixture. If desired, de-sired, sprinkle a few chopped nuts over the top and bake at 350 degrees for 40 minutes. Serve plain or topped with whipped cream, topping or ice cream. Suzanne enjoys music, sewing .' and gardening and works with . the Centerville Elementary . School PTA, and teaches in her church. ; . The older boys like all sports and fishing and are scouts. Mr. Spencer is employed at Chicago Chica-go Bridge and Iron in Salt Lake city as an engineer. He also works with the boys in scouting. |
