In mixer bowl, beat egg yolks, lime Juice, and water; stir Into gelatin. Cook at MEDIUM for 4 to 5 minutes or Just till bubbly, stirring every 30 seconds. Add lime peel and food coloring; mix well. Chill, stirring occasionally, till mixture mounds sightly when dropped from spoon. When gelatin mixture nearly mounds, beat egg whites to soft peaks. Gradually add '4 cup sugar; beat to stiff peaks. Fold gelatin mixture Into egg whites. Fold in whipped cream. Pile Into baked pastry shell. Chill firm. Garnish with additional whipped cream and lime wedges. |
