Show Rarebit Substitute When the clock points to midnight, food takes on an added zect. and seldom sel-dom does it taste so good as then. For years the rarebit has been the standard stan-dard dish for the midnight supper; and incidentally it has furnished much material to jokesters and cartoonists by its indigestibilily- But so that there need be no troubled sleep interspersed in-terspersed with wild and terrible dreams, some epicurean has invented a substitute for the rarebit. It Is called call-ed the red devil and is made as follows fol-lows Melt two tablespoonfuls of butter in a chafing dish, then cut up into small pieces one pound of cheese and melt that, too. Add a pinA of salt, a dash of cayene, two tablespoonfuls of flour, a pinch of soda, one egg and three-quarters three-quarters of a cup of milk. Mix all together to-gether until smooth, then add half a can of tomato soup. Serve on toast or biscuits. nn |
