Show fl HOME CANNING PROFITABLE. H One of the most significant developments of the last few years H fn the south has been the increased attention given to home can- H ning, says the 'Charleston (S. C.) News and Courier. Where former- H ly tliere was an enormous waste through vegetables rotting on the 1 farmers' hands, there arc saved now great quantities of food through H canning. An outfit can be purchased at a very low cost A small H cannery can be bought for $3.50 and one of a fairly large capacity, j complete in every way, for $17.50. More extensive plants arc of- 1 fered at $100. Empty cans and labels are offered at comparatively H low prices. Indeed, a number of factories devoted entirely to sup- H plying canning materials to the farmer have been established in the H bouth of late. It is found that the market for goods canned at home 1 Is good and the prices generally higher than those given for ordi- 1 nary canned goods. Grocery stores arc glad to get canned products M which they kiiow are good. But quite aside from the market, the M development is highly significant, for it enables farmers to put by H from the abundance of the summer a plentiful supply of food to H carry them all winter. On many farms now the house garden is H larger than ever, the object being to produce enough to last the full 1 year. This materially cuts down the cost of living and makes the farmer almost entirely independent of any sourco of supply except liis own lands. The sy.stem is not yet so general as it should be, but it has made great strides in the last three years and is progressing more rapidly each season. It is altogether reasonable to suppose that within a few years over 50 per eent of the farmers of this state will produce practically all of their own canned goods. One has onlr to glance over advertisements in agricultural papers to sec just how extensive home canning is. It offers another reason for diversified farming. If we must ship our chief raw material, at least wc can manufacture our own food products. It means additional addi-tional prosperity. |
