On whose authority? 1 1 The role of animal fats in heart ij and arterial diseases is unsettled; j i distinguished medical authorities i continue to differ. On one point, ji there is virtually universal agree- 1 1 ment that the American diet ji tends to contain too much of all ij or any kind of fat. It is also recog- J i nized that other factors than diet i j may play a part in causing heart J i diseases. i j A letter received from a reader displays some of the confusion which has arisen through the controversy over fats, oils, nutrition nutri-tion and diseases of the arteries and the heart. The lady asks: "Can I use mineral oil for cooking? I want to cut down on my calories, and. of course, J know that I should not use animal ani-mal fats. I have already begun to use salad oils in place of butter, but-ter, to cut down my calories." This is an interesting letter. To answer the first question first mineral oil is nontoxic, and supposedly could be used for cooking, but it has other disad-vantages. disad-vantages. It tends to absorb the fat-soluble fat-soluble vitamins A and D from, the intestines, thus depriving the I body of these essential nutrients. It has a disagreeable tendency to leak from the bowel and stain I the clothing. And it contributes no useful nutrients, as the other Nutrition Authorities ji Two of the most knowledgeable i sources of judgment in nutrition- ji al matters, the Food and Nutri- i ion Board of the National Re- i search Council, a governmental i agency, and the Council on Foods ji and Nutrition of the American i Medical Association, are in agree. ji ment that in the present state of i 1 1 our knowledge, there is insuffic-K ient warrant for making any radi-j i cal ciianses in the American di-!i etary, beyond moderate reduction' i in the total amount of all kinds j, cf fats. j i The key to heart disease pre- j i vention seems to be moderation 1 1 in many phases of living, rather j, than all out tampering with the , diet Calorie Cutting The inquirer wants to cut down her calories, and perhaps she should; her doctor should advise her how to do it. As for substituting substi-tuting salad oils for butter to lower the calorie intake, here are some figures which should be sufficient commentary on that idea: Butter, which is 82 fat, plus sa!t and water, supplies roughly seven calories per gram, about 33 per teaspoon. Salad or cooking oils are 100 fat and supply roughly nine calories per gram, 42 per ! i i i |
