' I I ' W Works Wonders With A Wok By DONKTA GATIIKRIM SUNSET -- A soft sculpture plaque that hangs on the wall in the Sunset home of Kent and Kathy Brown shows a picture of a cook surrounded by fried chicken, tacos and a wok pan. The inscription states simply simp-ly "Kathy's Kitchen." THE KITCHEN of the Brown's home is really Kathy's. She enjoys decorating it with plaques, "collectable niemorahelia and cooking utensils. The Brown family, especially husband, Kent, appreciates Kathy's cooking skills. He says, "She can create gourmet dinners and desserts from nothing. Everything she cooks tastes so good. "When you eat in a restaurant it makes you appreciate how good her cooking is." RECENTLY KATHY says she and Kent went out to eat in one of Ogden's nicest restaurants. When they came home, Kathy had to admit that her food was as good as the food served in this restaurant. Kathy, a native of Myton, Utah, spent most of her life in the Ogden area. She and her family have lived in Sunset for five years. KATHY IS the mother of two boys, Kraig who is just about 8, and Kent w ho is 12. She works at the Clearfield Convalescent Center as a nursing assistant. Kathy enjoys working with older people who really can use help. They appreciate what you do for them. You learn empathy for others. ALTHOUGH Kathy does enjoy cooking for her family, she is also happy when she can prepare food for larger groups of 12 or 13 people. Kathy's Mexican food is self-created. She bought commercial packaged foods and then experimented until she could duplicate or improve upon the store products. "I can't share any Mexican recipes because I never have written what I do down on paper," pap-er," she confesses. ABOUT A year ago, Kathy became interested in-terested in Wok cooking. "It's a fast way to prepare a meal for my family especially now that I am working." she says. Kathy says a good wok dinner can be prepared by cubing meat and browning it then adding vegetables that are fresh and seasoning. ANOTHER FAVORITE wok recipe Kathy uses frequently is chicken with oriental-style vegetables. CHICKEN WITH GREEN PEPPERS AND BAMBOO SHOOTS IN OYSTER SAUCE 2 Tablespoons vegetable oil 1 large green pepper cut into ' 4 inch cubes V cup sliced bamboo shoots V pound small w hole mushrooms or large ones quartered 4 chicken breast halves, skinned and chopped into bite-size pieces SAUCE: 1 small onion, sliced or 1 scallion sliced 2 Tablespoons soy sauce 2 Tablespoons oyster sauce V: cup chicken broth 1 Tablespoon brow n sugar 1 teaspoon grated ginger root I Tablespoon cornstarch in 2 tablespoons hot water HEAT OIL in w ok and stir-fry green peppers pep-pers 2 or 3 minutes. Push aside. Add bam- V boo shoots and mushrooms. Stir-fry 2-3 minutes. mi-nutes. Push aside. Add chicken and stir fry 3-4 minutes until done. Return vegetables to the chicken in the wok. Immediately add a sauce made by simmering together the sliced onion, soy sauce, oyster sauce, broth, sugar, ginger root and cornstarch mixture for about 10 minutes. Heat this mixture mix-ture with the chicken and vegetables for 2-3 minutes. Serve at once with rice. Kathy says any excess meat or chicken juices she freezes and uses later for gravies. FORTUNE cookies always go well with a wok dinner. Kathy says you must work quickly when making fortune cookies but the results make your efforts worth while. FORTUNE COOKIES Measure exactly like a crepe batter: Vi cup flour, 'A cup sugar, 2 Tablespoons corn-, . starch, teaspoon salt. Mix together in a small bowl. Stir in and heat until smooth with a wire wisk, Vt cup vegetable oil, 2 egg whites. Add 1 tablespoon water and mix well. LIGHTLY grease crepe pan or pancake grill. Pour one spoonful of batter on hot grill and smear around to form a 3 inch circle. Let brown to golden color. Turn for a few seconds then remove. Place fortune inside and fold to form fortune cookie shape. Do this fast because the dough becomes brittle in a few seconds. Some helps with the fortune cookies are: use muffin tins to help hold the forms; have fortunes ready, you will need approximately approximate-ly 50; a pancake grill allows you to do 4 or 5 at a time; set the heat at 325-350; if you take the cookies somewhere else, use cupcake paper to protect each one. KATHY BROWN is a versatile person. Besides cooking, she enjoys ceramics (her front room is decorated with beautiful vases she has painted), counted cross stitch pictures, pic-tures, soft scupturing and many other crafts. Her soft sculpture plaques of the three little pigs, Hobby Holly, and a kitchen witch are delightful. The most striking of all her sculptures is a caricature of herself and her husband. Desserts are a favorite with everyone. Kathy's favorite pie recipe is as follows: CHOCOLATE-VANILLA PIE Crust: ': cup butter 1 cup flour 1 cup chopped nuts MIX AND pat into cake pan. Bake 20 minutes at 350 degrees. Filling: 1st: 1 cup powdered sugar 1 cup Cool Whip 8 ounces cream cheese MIX WELL and spread on crust. For second layer use one package instant vanilla pudding. 1 cup milk (use only one-third one-third of amount called for on package). SpFead on first layer. FOR THIRD layer take 1 package instant chocolate pudding. Use ': of milk called for on package. Pour over vanilla mixture. Fourth layer: use remainder of Cool Whip topping for top layer. Grate chocolate candy can-dy bar on top. |
