However, anyone would enjoy the gol-: gol-: den color and piquant lemon : tang of this soup or as a sauce over many dishes of vegeta-: vegeta-: bles to fowl. ; THIS SOUP, delicate and ' light and thickened slightly : with rice and eggs, is very ' nutritious, as well as delicious and often made by ' Karen Tyler who loves to cook : many types of Greek foods. This soup would be a "good first course for a heavy meal or for a light summer luncheon with its delicate " flavor. EGG-LEMON SOUP - SOUPA AVCOLEMONO 8 cups chicken broth 1 cup rice 4 eggs, separated juice of 2 lemons salt lemon slices for garnish BRING CHICKEN broth or bouillon to a boil, salt to taste and add rice, simmer, covered for about 20 minutes until rice is tender. Remove from fire. In a bowl, beat egg whites until stiff and add yolks, beating well. Very slowly add lemon juice to eggs, beating continuously with mixer, then add 2 cups of the hot chicken broth and do not stop beating. This continuous beating is the secret to prevent curdling of this delicate soup. WHEN THE broth and eggs are well mixed, pour the mixture back into the remaining broth and rice.
