Once given a trial it will soon appear again on the family menu. Cream of Cheese Soup Chicken a la Creole Onions Stuffed With Celery Potato Salad Peach Short Cake Coffee Cream of Cheese Soup. Put a quart of milk into double boiler, boil-er, add quarter pound cheese (grated), one teacpoonful onion juice, half tea-spoonful tea-spoonful salt, dash rod pepper. Blend one tablespoonful butter with same quantity of flour, then add cheese mixture. mix-ture. Stir until lather thick. Beat up yolks of two eggs; add four table-spoonfulB table-spoonfulB soup and pour into soup tureen two dozen inch cubes of toasted toast-ed broad. Pour over the soup and serve immediately. Will serve skc persons. ' Chicken a la Creole. Joint one chicken as for frying. Put one spoonful of grease into kettle and when hot add ono small can of tomatoes, to-matoes, two or three cloves of garlic, a good sized onion, a little parsley, some celery, a bay leaf, a sweet pepper, pep-per, all cut up fine. Add red pepper to mako real hot and salt to taste. Then add chicken and water enough to cover It. Let simmer for two or three hours until moat Tvill drop from bones. Then add flour enough to thicken gravy, which is delicious served over plain boiled rice. Onions Stuffed With Celery. Eight onions, six tablespoonfuls butter, but-ter, threo tablespoonfuls flour, ono-half teaspoonful salt, one-quarter teaspoon-ful teaspoon-ful pepper, ono cupful milk, one-half cupful celery broth (liquid In which the celery was cooked), two cupfuls cooked celery, one-half r cupful cracker crumbs. Peel onions and cook in boiling boil-ing water until tender; cut out tho centers to form thin walled cases. While onions are cooking, melt ono-half ono-half tho butter, in It cook flour and seasoning, add milk and broth and stir until boiling; add the cooked celery (cut in one-quarter inch pieces before cooking) and uso to fill tho onions, mix cracker crumbs with melted butter but-ter and tpread over the tops of stuffed onions. Let cook in the oven until the crumbs are browned. Any of the creamed celery left over may be served around ttje onions. Peach Shortcake. Mix two cupfuls of flour with one cupful of milk or cold water. Add a tablespoonful of butter and one table-spoonful table-spoonful of baking powder. Itoll out and cut with a small biscuit cutter. Bake in an oven which Is hot. LTavo ready sliced canned peaches sprinkled with sugar. Split the biscuit, place a tablespoonful of tho peach mixture between be-tween the halves and pour more of the mixture over each portion. |
