It gives a new taste to this green vegetable and puts it in the "something special" class. One can (1 cups) condensed cream of mushroom soup is sufficient for one bunch of broccoli weighing about s pound. Wash broccoli well. Split stalks for faster cooking. Stand broccoli upright in a small amount of boiling salted water and cook uncovered until tender. Or flowerets can be cut off stalks; then cook stalks 5 minutes before adding flowerets. '".Meanwhile pour the soup into a small saucepan and stir to blend; heat slowly. When broccoli is done, drain it and place on a platter; pour hot mushroom sauce over it. Serves four. r For occasional variation, stir H cup grated Cheddar cheese into the hot soup and stir until smooth. |
