It's a flavorful flavor-ful casserole of salmon, mushrooms, mush-rooms, and cooked rice combined com-bined in a rich cheese sauce. The milk and cheese both give a boost to the nutritive value ;of the dish, in addition to forming a creamy base to blend flavors. Here's a casserole which will freeze well, to be popped into the oven for a hurry-up meal: And it's hearty enough to require re-quire only a green vegetable, fruit salad, and buttered rolls to provide the main course of your dinner. SALMON RICE AU GRATIN Vt cup butter 'a cup chopped celery 2 tablespoons chopped onion 2 tablespoons flour 1 teaspoon salt Vs teaspoon pepper 2 cups milk 2 cups cooked rice 1 1 -pound can salmon, drained boned and flaked M pound processed American Amer-ican cheese coursely shredded 1 3-ounce can mushrooms, drained Vi cup chopped parsley, optional Melt butter over low heat. Add celery and onion and cook slowly until tender. Blend in flower and seasonings. Add milk, stirring constantly; cook until sauce is smooth and thickened. Blend sauce with remaining ingredients. Pour into buttered 2-quart casserole. Bake in slow oven, 300, until heated through, 25 to 30 minutes. min-utes. Makes 6 servings. |
