Show Glaced Fruits Enliven Creamy Smooth Christmas Fudge Festive looking and deli-ciously deli-ciously good is this Christmas fudge. All the good fruits which go into the holiday fruit cake are blended into creamy fudge to give this candy its pretty look, its fruity flavor and its nice texture contrast. Either glaced' fruit mix already al-ready prepared for fruit cakes, or a combination of glaced' fruits of your own choosing can be used. The basic fudge, made so creamy and smooth with butter and cream, has the subtle tang of fresh lemon to point up the fruity goodness. CHRISTMAS FUDGE 3 cups granulated sugar 1 cup cream (or half 'n' half) 2 tablespoons butter 2 teaspoons lemon juice 1 teaspoon grated lemon rind 1 cup chopped glaced' fruit Method: Mix sugar, cream and butter in heavy saucepan. Cook slowly until sugar dissolves, dis-solves, stirring constantly. Then cook over medium heat to soft-ball stage (238 F.), stirring all the while. Cool. Add lemon juice, rind, and glaced' fruit. Beat until crystallization crys-tallization begins. Turn into buttered pan. Mark in squares. Makes 1 pounds. Note: Glaced' fruit mix such as for making fruit cake, or a combination of chopped glaced' pineapple, candied cherries, finely chopped citron, candied orange and lemon peel may be used. |
