I by Janet Weaver This week we'd like to feature two main dishes which are sure to please the cook and the eaters. Thank's goes to Mrs. Wendy Wood for sharing these favorites. Stacked Encbaladas Brown 1 lb. hamburger and one onion (cooking completely) Add one can Pork N' Beans and simmer gently. SAUCE 1 can tomato soup 1 can tomato sauce 1 can water 1 tsp. oregano 1 tsp. chili powder Several drops Tabasco sauce NOTE : prepared enchala sauce or the seasoning mix package works just as well. Chop lettuce in a bowl Chop tomatoes in another bowl Grate cheese When ready to serve, fry flour tortillas in hot oil. Put tortilla on plate and stack with meat mixture; cover with sauce and then stack with lettuce, tomato and cheese in that order. Yummy ! Hamburger Patties 2 lbs. ground beef 1 chopped green pepper 2 cups grated potatoes 1 chopped onion 2 (or 3) beaten eggs 2 tsp. salt 4 tsp. pepper 2 cans cream of mushroom soup Mix all ingredients (except (ex-cept soup) well and shape into thick " oval ' patties. Brown well but don't cook (moderately hot pan). Place patties in a large baking dish. Put 1 TBS of undiluted soup on each patty. Bake from 30-40 minutes at 350 deg. This is a delicious meal in one whether entertaining or just for that special family. Thanks again Wendy! We have a request for any special recipes for those on sugar and salt-free diets.
