Show Keep IWi At 40 Life begins at 40. That is, for the milk in your refrigerator, 40-degrees Fahrenheit or greater allows bacteria to grow and mul-tip'y. mul-tip'y. . MILK ORDINARILY maintains main-tains its freshness and flavor for 10- to 2Mays when kept at temperatures below 40-degrees 40-degrees Farenheit, says Dr. Harry L. Gibbons, director of the Salt Lake City-County Health Department. He says that parents should be aware of the hazards of leaving milk out, especially during these hot summer days when your children raid the refrigerator for milk and cookies. SEVERAL THINGS may happen. Prolonged exposure of milk to sunlight destroys the flavor and reduces the riboflavin, or B-2 content. You may have even become accustomed to the milk's new taste because of this problem, for as little as 20-minutes exposure ex-posure to sunlight can result in altered flavor. When you leave a gallon of milk on the table at mealtime, meal-time, it experiences a significant sig-nificant rise in temperature and picks up odors. If you have a small family or only occasionally use milk, loss of freshness and change in taste may cause you no end of nuisance and frustration, as well as loss of the milk. SO, FOLLOW the three "C's" for all dairy foods. Keep them cold, keep them clean and keep them covered. Place the clean, closed cartons car-tons or jugs of fresh milk in the coldest part of the refrigerator. To protect the milk's flavor, keep the container out of the refrigerator just long enough to pour the amount you plan to use. Always hurry home after buying your dairy products and never let them remain uncovered in the car for a long period of time. BOTH THE milk industry and the Health Department are doing everything possible to assure the public that their food supply is safe. However, you are the only one who can apply quality control for food in your home. |
