Show i I j ; V A" ' 5i" ' VV-CV, V4 HOT ROLLS Sonja, Heather, Shallene and Melinda always are waiting wait-ing for a hot crusty crescent roll after mother Kathy Elliott takes them from the oven. KATHY ELLIOTT bakes these tender crescent rolls for all special occasions and sometimes inbetween times, for the family really looks forward to these yummy rolls with butter and jam. The recipe is a favorite of a neighbor, Sylva Hughes, who loves to share her recipes with other homemakers. THIS RECIPE makes about 24 rolls, so there are seldom any left over, but if your family is small or if you dou ble the recipe, freeze part of them to warm up at a later meal. CRESCENT HOT ROLLS 1 T. dry yeast 1 cup milk, scald and cool 13 cup sugar 13 cup soft shortening tsp. salt 2 eggs, beaten 4 cups flour SOFTEN YEAST in cup warm water. Mix sugar, shortening, salt, milk, yeast and 1 cup of the flour, beating with mixer for about 1 minute. Add eggs and beat 2 minutes. Add the remaining flour to make a soft dough and knead about 5 minutes. Roll out and spread with another '4 cube melted butter, cut into triangles and roll each piece into a crescent, the point on top of roll. Place on baking sheet and let rise, about 45 minutes until double in bulk. BAKE AT 375 degrees about 8 to 10 minutes until golden brown. This makes about 24 rolls but double or triple for a larger number of rolls. Kathy and hubby Ross Elliott, four daughters and one son live at 969 South 200 East in Farmington. The children are Shallene 11, Sonja Son-ja 9, Melinda 7, Heather 3 and Ross 4 years. THE FAMILY all helps with a summer project of raising sweet corn which is always ready to sell in early summer. The older children help to weed the young corn and when it is ready for eating, eat-ing, they help to sell it from their home. They usually have the best early corn in the community, along with other members of the Elliott family. Kathy sews, crochets and loves to read when there is time. The children are active in a number of sports and she teaches Primary class. She is originally from Oregon and met Ross when they were both attending BYU.
