Show This Week's RECIPE . . . For a delicious luncheon or parly menu, try the following ; Chicken Loaf recipe, submitted by M.rs. Clair Ashton, who states that it is especially tempting ! served with orange rolls. Chicken Loaf (Serves 16) Boil until tender a 4 pound chicken, with 2 onions, 4 carrots j and 2 stalks of celery. Bone chicken and cube. Combine Com-bine with the following: 1 cup cooked rice 2 cups soft bread crumbs IV2 tsp. salt Va cup chopped pimento 1V& cups strained chicken broth IV2 cups milk 4 well-beaten .eggs Combine chicken and above ingTedients and place in two well-greased loaf pans (bread size), and bake at 325 degrees for Vz hours. Serve with following mushroom mush-room sause: 4 cup butter j V2 cup flour ! V2 cup milk j 2 cups chicken broth (strained) ; 1 8-oz. can mushrooms. I Melt butter, add flour and I stir until blended. Add remain-I remain-I ing ingredients and cook until slightly thickened. |
