Show MACARONI AND PEAS. Boil four ounces macaroni in salted water for 20 minutes. If desired the water may be flavored with onion and aromatic herbs. When done, drain, chop fine. Do not wash the macaroni after It is cooked. If it has to bo I washed this should be done by parboiling par-boiling it, the first water thrown away, and then placed in fresh boiling boil-ing water as directed above Put the macaroni into a saucepan, dry, and add two ounces of fat and two ounces to four ounces of cheese, either grated or chopped fine. Season with salt, pepper ojr caynene, and nutmeg and add sufficient stiff while sauce to make it creamy. Boil all together and plaec on a dish to cool about three-quarters three-quarters of an inch thick all over, cover with a paper, and when cold cut in squares, triangles or diamonds; egg and breadcrumb and fry In deep fat. Garnish with fresh green peas. |
