Some special party recipes for New Year's Eve were offered by two local ladies who've found that special desserts don't have to be difficult or time consuming. These crepe recipes from Chen Womack are easy to do ahead for New Year s Eve or other get togethers. "The cheese blintz is my favorite," Cheri said. "It looks quite festive, too. And the crepes are something even kids can do once you've made the batter. You can let them fry and fill their own." CREPE BATTER 4 eggs 'A tsp salt 2 cups flour 2'4 cups milk V4 cup melted butter Mixer or whisk method: In medium mixing bowl, combine eggs and salt. Gradually add flour alternately with milk, beating with an electric mixer or whisk until smooth. Beat in melted butter. Blender Method : Combine ingredients in blender jar ; blend for about 1 minute. Scrape down sides with rubber spatula and blend for another 15 seconds or until smooth. Both Methods: Refrigerate batter at least 1 hour. Cook on upside down griddle or in traditional pan. CHEESE BLINTZES IV2 cups small curd cottage cheese, drained well 3 ounces cream cheese '4 cup sugar 1 beaten egg 1 tsp vanilla V2 tsp grated' lemon or orange peel (optional) 2 T butter powdered sugar isour cream . . strawberry preserves Lightly mix cottage cheese, cream cheese, sugar, egg, vanilla, and grated lemon or orange peel. Spoon the filling into the center of the crepe with the browned side up. Arrange the crepe Blintz style by folding four sides up and across the center. (Optional) melt butter in skillet. Fry each side to a golden brown. Top with a sprinkling of powdered sugar. Garnish with sour cream and preserves. Yield: 12 crepes. APPLE CREPES 5 tart cooking apples 3 T butter 'i cup brown sugar V2 tsp cinnamon ' cup whipped cream Peel, core and thinly slice apples. Melt butter in heavy skillet. Add apple ap-ple slices, brown sugar and cinnamon. Simmer for ten minutes. Spoon mixture onto sweet crepes and roll. Top with whipped cream. Yield: 12 crepes. CHICKEN DIVAN CREPES 14 cup butter y4 cup flour 2 cups chicken broth 2 tsp Worchestershire sauce 3 cups grated cheddar cheese 2 cups dairy sour cream 2 ( 10 oz ) pkgs frozen broccoli spears or 1 Vi lbs broccoli, cooked and drained. drain-ed. 2 cups chopped cooked chicken 12 cooked crepes Over medium heat, melt butter in small saucepan. Stir in flour and cook until bubbly. Add broth and Worchestershire sauce, cook, stirring until thickened. Add 2 cups cheese. Empty sour cream into medium bowl ; gradually add hot cheese sauce, stirring constantly. In large shallow bak-ing bak-ing dish, place cooked broccoli and cooked chicken on each crepe. Spoon 1 tablespoon sauce over each. Fold crepes over. Pour remaining sauce over all. Sprinkle with remaining cup of cheese. Cover and heat in 350 degree oven for 20 to 30 minutes. Makes 12 crepes. Marlene Luck, an employee at Mr. S Clothing, offers this recipe for an easy New Year's treat, miniature cheese cakes. "It tastes like the real thing," she said of the family recipe, "and I think people are always surprised to taste it in miniature. The topping can be pretty. I usually make holly designs with the red and green candied cherries cher-ries on the sour cream topping." Miniature Cheese Cakes 1 cup commercial sour cream 20 vanilla wafers 2 - 8 oz. pkg. cream cheese cup sugar 2 eggs 1 tsp. lemon juice V2 tsp. almond extract tsp. vanilla extract 2 T. flour Place vanilla wafer in bottom of cupcake paper in muffin tin. Beat softened cream cheese, sour cream, sugar, eggs, lemon juice and extracts until light and fluffy. Fill baking cups full with cream cheese mixture. Bake at 375 for 15 to 20 minutes. Cool and garnish with pie fillings or sour cream and sugar blended. Then top with candied cherries for a holiday holi-day flair. J |
