Show FOOD FACTS by Bob Evans DID YOU KNOW The Sole is a supremely delicate fish belonging to the "Malacap-tervgae "Malacap-tervgae Subfrachia" family? Unfortunately it is not found in American waters, and due to the fact that it has to be imported, thus commands rather ra-ther a high price. So most of the fillets of sole found in our markets are not fillets of genuine sole, but from flounder, floun-der, fluke and other flat, white-fleshed fish found in our waters. While these provide pro-vide an excellent substitute thev cannot compare with the real sole. As a general rule. Sole remains re-mains at the bottom of the water alorig the shores in close prooinau'tv to the sand or mud in wh'ch these fish find their nourishment. The head of the Sole is not svmetrical. Both eyes are situated on the same side of the head, which side is always al-ways uppermost when the fish swims. This characteristic characteris-tic is found also in the Flounder, Floun-der, Fluke and some other flat fish. The eveless side of the fish is whitish, on this side is the mouth, twisted, and rather bulldogish. The teeth are fine, velvety, and very close together. The general gen-eral contour is oblong, with a rounded protruding snout. The chemical composition of an edible portion of Sole is similar to that of the Cod, including calories and vitamins. vita-mins.
