In respoiibe to questions as to the best method ot" washing oysters without swelling them to an extent tiiat constitutes consti-tutes adulteration under the regulations, Commissioner Smith says that moderate washing is pro bald y ciesirablo and necessary, but he does object to any method that increases the volume of the oysters to any appreciable extent, either by permitting the oysters to remain re-main iii tho liquid and absorb the water by the so-called ' ' plumping ''' method, or by the intdoduction of an excess of free liquid into the containers in which the oysters are shipped. Hot h state and federal officials have been answering such inquiries by stating stat-ing that the dealers in oysters are entirely en-tirely able to determine for themselves whether or not any- particular method of washing results in an appreciable increase in-crease in the volume of the eoysters or in the amount of juice that normally should be present. Any method that produces an appreciable appre-ciable increase, should be discarded or modified. Any method that calls for soaking or washing for an excessive period, pe-riod, excessive agitation in water for a short period, or 'incomplete draining of the washed oysters should be avoided, says Mr. Smith. |
