We chose the easy way packaged pack-aged white cake mix to bake in a ring mold and this luscious ice cream. The packages of prepared cake mix vary in weight. If the one you use weighs more than 2 ounces over a pound, make a cup cake or three rather than filling the nine-inch nine-inch ring mold (1V4 quart) you may be using. An eight-inch mold usually a quart size will need approximately a half package. SNOW CAKE RING (With Cherry Vanilla Ice Cream) Liberally butter a nine-inch ring mold. Follow the directions on the package of a white cake mixx. Scrape batter in mold. Bake in a moderate oven 350" for about 40 to 45 minutes. Allow to "rest" in pan for 10 minutes, then turn out on rack to cool. Frost with a butter-cream frosting frost-ing in which the vanilla may be omitted andor all of the liquid used may be maraschino cherry juice for lovely color and unusual flavor a perfect compliment to the cherry vanilla ice cream which is spooned, rounded side up, into m the ring just before serving. Ring should make 10 servings. BUTTER CREAM FROSTING Vt cup butter 2 cups sifted sugar About 3 tablespoons cream Vi teaspoon vanilla extract Let butter stand to soften a little, then cream until light in color, fluffy and creamy. Gradually Gradu-ally stir in about a third of the sugar. Add remaining sugar and cream alternately while stirring or beating until smooth. Use only enough cream to make of spreading spread-ing consistency. Add vanilla or other flavor when mixture is smooth. This may have many flavor fla-vor variations. |
