Show Happy Homemakers Mash Your Potato Salad By Janet Weaver Picnic season is upon us and if you are tired of your plain old potato salad, you might want to try this variation. MASHF.n POTATO SAI.AI) 4 lb. pared medium potatoes (8-10) 1 1 ! tsp. salt 1 1 tsp. pepper ' i cup vinegar 1 to l' cup salad dressing (or mayonnaise) 6 hard-boiled eggs, coarsely chopped 3 medium tomatoes 2 cup chopped green onion tops :l i cup chopped green pepper . 1 cup chopped celery In a large kettle, cook potatoes in 1 inch boiling salted water, covered, until done (approx. 30 minutes). Drain well. Mash in pan until light and smooth. Add salt and pepper, vinegar and salad dressing; mix well. Add egg and rest of ingredients and toss gently to combine. Mound in salad bowl.
