Show New Nectarine - Vegetable Salad T-T 1 'U Here is a really wonderful salad for summer meals. It's crisp and succulent, fresh tasting and colorful. Nectarines, those red and gold beauties now in our markets from California, give this salad its "something special" quality. The unusual combination of this juicy, golden fruit with raw cauliflower, cherry tomatoes and green pepper makes this salad 8 conversation piece as well as a crowd pleaser for a summer party. It's easy to double the recipe and you'll find that it's good with all your favorite barbecued meats. Picnic tip: Nectarines are ideal for out-of hand eating because you don't, need to remove their colorful, tender and satin-smooth skins. NECTARINE BARBECUE SALAD 2 cups sliced fresh nectarines 3 cups torn western iceberg 20 cherry tomatoes, halved lettuce and other greens 2 cups thinly sliced Vz cup bottled Italian dressing cauliflower Salt Ji cup diced green pepper Pepper Combine nectarines with vegetables and greens in large salad bowl. Cover; refrigerate until serving time. Pour dressing over mixture; add salt and pepper to taste. Toss gently. Makes 6 to 8 servings. |
