Only careless smoking and heating-un- it fires claim more lives in a year than cooking fires. These are also the leading cause of apartment fires, according to National Safety Council figures. The best way to prevent cooking from becoming a fire hazard is to pay attention to it. While a watched pot may never boil, an unwatched pot could turn your home to cinders. Insurance companies and fire departments recommend that you have a fresh box of baking soda on hand to extinguish small electrical or grease fires that may break out. In the event of a small grease or electrical fire, turn off the broiler, range or oven and unplug the appliance if you can. Stand back and toss generous handfuls of baking soda at the base of the flames. When heated, baking soda releases carbon dioxide, which smothers the flames. Since baking soda is of iood grade purity, it wont hurt the food being cooked. When the fire is out, just rinse the baking soda off and start cooking where you left off. Dont try to put out a deep-fa- t fire with baking soda because the fat may splatter, spreading the fire. Instead, put a lid over the pan to cut off the oxygen. To avoid fanning the flame, never carry a pan away from the stove One way to be really prepared is to make a baking soda fire pail to keep near your range and woodburning stove. Its simple! Just fill a coffee can with baking soda and wrap a baking soda fire pail label around the can.
