Hard to grow, hard to pick, hard to find, hard to keep, transient, ephemeral, fragile little rounded mounds of what plant people call drupes connected oh, so delicately around a white central core. Raspberries! Served with everything frm braised rabbit to roasted duck, in everything from shortcake to mousse to ice cream to bui bet, to pie, jeiiy, pudding, cake and tart, to, even, raspberry vinegar. now you see them, Raspberries now you dont are in season through September. Raspberries! Hand picked, easily crushed, quick to spoil, no wonder they're expensive. But despite their cost and perishability, people buy them. Raspberries are also good for you. For example, SV4 ounces of red raspberries will put only 57 calories onto your hips. Even better, raspberries contain vitamin C, calcium, potassium and a goodly amount of vitamin teaspoon tarragon and V teaspoon pepper. Put halves onto a rack set over a drip pan. Roast duck until meat at thickest portion registers 150 degrees, about 40 to 50 minutes. Meanwhile, snap off tough ends from asparagus. Lightly peel stalks.
