Everybody's favorite Hot Fudge is equally good and goo-ey cold! Glowingly pink Peppermint Stick and sophisticated Coffee Pecan are great for change-of-pace flavor. The rich and creamy qualities of smooth-blending evaporated milk assure success of these preparation-easy sauces. Hot Fudge Sauce: In a small saucepan add 1 package (6 ounces) semi-sweet chocolate chips to cup evaporated milk. Stir over low heat until chocolate is melted and sauce is smooth. If desired, add teaspoon vanilla. Serve warm or cold. Makes about 1 cup sauce. Peppermint Stick Sauce: In a medium saucepan mix 1 cup sugar, cup water and Vfc cup light corn syrup. Bring to a boil, stirring constantly. Continue cooking 3 minutes over medium heat. Remove Re-move from heat; add Vi cup crushed peppermint stick candy and stir until dissolved. Stir in cup evaporated milk. Just before serving, stir in an additional cup crushed peppermint stick candy. Makes about 1V& cups sauce. Coffee Pecan Sauce: In a medium saucepan mix 1 tablespoon instant coffee with 1 cup sugar. Stir in cup light corn syrup and Vi cup water. Bring to a boil, stirring constantly. Continue cooking 3 minutes over medium heat. Remove from heat and cool 6 minutes. Stir in Y2 cup evaporated milk. Before serving, stir in y2 cup chopped pecans. Makes about 1 cup sauce. |
