Show Aspen Cove Restaurant i grand opening Vernal's newest reslaurant is planning plann-ing its grand opening this weekend. Located on west Highway 40 next to the Twin Cinema, Aspen Cove Restaurant has been open for business for the past several weeks, according to manager Don Griggs. The new enterprise is owned by a group of Vernal businessmen who realized the need for this type of service in the area, according to Larry Brady, one of the participants. The investment group includes in-cludes Dennis and Warren Mott, Brad Stone, Bob Herrington and Mr. Brady. An outstanding characteristic of the Aspen Cove Restaurant is the use of volcanic rock from southern Utah on the outside as facing and throughout the inside. The structure is designed with a self service area on the north end of the building and a dining area called "Aspen Shadows" on the south with the kitchen in the middle. Entrance is on the east side through separate doors into in-to each dining area. Entrance into Aspen Cove is from 500 South off west Highway 40 into a spacious parking lot. The self service eating area can seat 130 persons and is open from 11 a.m. to 10 p.m. The Aspen Shadows dining room can seat 100 persons per-sons and is open from 5 p.m. until 10 p.m. Griggs was appointed manager of Aspen Cove after he left the Cow Palace in Roosevelt where he served for over three years. Prior to this Griggs was a meat cutter at Grocery Discount, also in Roosevelt. Griggs says he employees 22 persons. He said the restaurant has a large self service menu as well as a complete steak menu in the dining room during the evening houu s. |
