Only the poor utilized it as food and the epithet "Shad Eater" became indicative indica-tive of poverty. In 1736 Shad was advertised in Boston for a penny apiece. Public opinion opin-ion has changed so that today to-day Shad is a great blessing. Shad is a salt water fish. The males spend two to five years at sea and the females' four to six years before they move into the rivers to spawn. They start to move upriver when the river water wa-ter is a few degrees warmer than the sea; if they spawn in the rivers below the fresh water line, it is because they find the necessary warmth there. In the Hudson, James,, Potomac and Deleware they are usually above the fresh water line. The Shad that get through to fresh water spawn and then swim back to the open sea. They are flabby and useless for food. Shad Roe is a great delicacy. deli-cacy. Because of the size of the fish, the roe is a good size, and the individual eggs are about the size of a good-sized good-sized pin head. As a result the texture is a cross between be-tween moistness and crisp-ness crisp-ness which is very delicious. Shad Roe may be ,. broiled, baked, sauteed, planked, mixed mix-ed with "an omlet or made into in-to croquettes. In order to make dining at the Desert Inn better than ev er we are serving, at varying vary-ing times during the week, surprise specials. These specials spe-cials will represent a com plete departure from the traditional tra-ditional and will be more than worthwhile to examine.
