J Bob Evans Did you know True Sherry Wine comes from Spain, froiri a district of which Jerez de la Frontera is the center, a district which lies within an imaginary line drawn from Puerto de Santa Maria to Rota, Ro-ta, San Lucar de Barrameda, Tribujena, Lebriya, Acros, and then back to Puerto de Santa Maria? The grapes are gathered and crushed in September, then after pressing, they are allowed to ferment. A band-full band-full or two of "Yeso" is sprinkled over the thick mass in the press. This "Yeso" is a native earth burned to a dust. The earth is found in large quantities in the nei-, phborhood of Jarcz de la Frontera, and consists almost al-most entirely of sulphate of lime. It is added in the proportion pro-portion of about two pounds to a ton of freshly crushed grapes, a quantify of grapes which will give a "botto" of 126 gallons of "must". The addition of sulphate of lime is peculiar to Jarez de la Frontera, Fron-tera, and has a marked beneficial bene-ficial influence on the quality and strength of the Sherry. The fermentation of the newly pressed grapes goes on violently for about three weeks, then proceeds at a slower pace during the ensuing en-suing eight weeks or so. The wine is then racked into new casks, and although it is still called musto, it is no longer a must, but a young wine, although al-though not yet Sherry. The casks are then stored in a-bove a-bove ground cellars called "Bodegas" and left to mature. ma-ture.
